Watermelon Inspired

It’s been a while I know I’m so sorry! I have been traveling crazy for a month, and it was really expected…
I went to Ibiza, New York, Washington DC and then Knokke (Belgian’s seaside).

Today I wanted to share with you some delicious and refreshing summer dishes. Today’s lunch to be precise! It’s not always easy to find some good and healthy recipes for summer, and these two are just perfect.

Summer dishes - LFC

As you can tell, I was inspired by watermelon. I always try to use seasonal products and when I saw this beautiful (and huge) watermelon at the farmer’s market on sunday, I just couldn’t resist.

Today I made a watermelon gazpacho and a watermelon and feta salad. The watermelon gazpacho I tried first last year when I was on vacation. It’s very delicious and I think easier to digest than regular gazpacho. It’s a bit more sweet too, but I like it that way. The balance is really nice. For the salad, it’s super easy and I’ve made it quite a bit since the past years. Always fresh, always light, and tasty. Even though I try to limit dairies, sometimes, I just can’t do it without…

Watermelon Gazpacho:

Summer dishes - LFC

  • 1/2 Watermelon (regular one… I had a HUGE one)
  • 2 tomatoes
  • 1/4 of red pepper
  • 1/2 cucumber
  • 2 shallots
  • 1 clove garlic
  • 2tbs red wine vinegar
  • 4tbs olive oil
  • a few leaves of basil
  • salt & pepper to taste

I blended first the watermelon… there was so much of it I couldn’t add anything else in the blender. I placed the mixed watermelon in a bowl and then blended the rest of the ingredients (tomatoes, red pepper, cucumber, shallots, garlic, red wine vinegar, olive oil, basil, salt and pepper). I then mixed both in the bowl and voilà! Easy peasy

  • 1/2 pastèque (d’une taille normale, la mienne était énorme)
  • 2 tomates
  • 1/4 de poivron rouge
  • 1/2 concombre
  • 2 échalottes
  • 1 gousse d’ail
  • 2 CàS de vinaigre de vin rouge
  • 4 CàS d’huile d’olive
  • quelques feuilles de basilic
  • sel et poivre

J’ai d’abord mixé la pastèque (que j’avais préalablement coupé en petits morceaux). Il y’en avait tellement que je ne savais pas rajouter d’autres ingrédients… J’ai ensuite placé le jus de pastèque dans un bol et puis mixé le reste des ingrédients ensemble (tomates, poivrons rouges, concombre, échalottes, ail, vinaigre, basilic, sel et poivre). J’ai mélangé les deux “jus” dans le bol et voilà, le gazpacho était prêt! 

Watermelon/feta salad:

  • watermelon (small piece)
  • feta
  • rucola
  • basil
  • olive oil
  • 1tbs red wine vinegar
  • salt & pepper to taste

Cut the watermelon in small squares, and spread the feta in small pieces with your hands. Put everything in a bowl, add the rucola, olive oil, red wine vinegar, basil salt and pepper and voilà!

  • pastèque (un petit bout – en fonction de la quantité que vous voulez faire)
  • feta
  • roquette
  • basilic
  • huile d’olive
  • 1CàS de vinaigre de vin rouge
  • sel et poivre

Coupez la pastèque en petits bouts, et émiettez la feta en petit morceaux avec vos mains. Mettez le tout dans un bol, rajoutez la roquette, l’huile d’olive, le vinaigre de vin rouge, le basilic, et ensuite salez et poivrez. Tadaaa, c’est fini!
